Tinfoil Dinners


Update: June 29, 2010  Hey I think it's my Nephew's birthday today!  Happy Birthday Myles!!!!  Alright It's time to bring this recipe forward again  but I have a question.

I don't really like the idea of cooking aluminum into my food.  But really is there another way to do Tinfoil Dinners?  I'm wondering if I took parchment paper and wrapped the food in that and then did a couple layers of the tinfoil.  Would that keep my food from absorbing the aluminum?  Would it work?  It may even help keep it from burning so easily!  Anyone have any thoughts?  Has anyone ever done this?

NOTE:  It does work!  This is the only way we ever make things with tinfoil anymore.  I love it!  It prevents burning and keeps tin out of my food.  I think that's a good thing. ;)





Tinfoil Dinners
Cut up some of your favorite veggies into chunks.
We used potatoes, onions, carrots, and mushrooms.
You could also use asparagus, peppers, broccoli, zucchini, yellow squash etc.
Place the cut up veggies on a piece of parchment paper on top of tinfoil. 
Add 1 Tablespoon coconut oil (Just blob it on top;) 
Some salt and pepper to taste and other seasonings if wanted.
We use a little rosemary, basil, parsley, a little Mexican and some Italian seasoning.

Wrap tightly in the paper and tinfoil and wrap a second piece of tinfoil tightly around that (you don't want dirt in your food;)   Then place in HOT coals or on top of but be sure to turn.  Depending on how hot your coals are it should only take about 20 minutes or less to cook. Longer if your coals are further from the fire;)

You can eat them right out of the tinfoil but we usually put them onto a paper plate! Simple, Healthy, Tasty! You should have heard my hubby MMMMmmmmMMMmmen over these! ;)

  4. I love camping like this! Adult food over a fire. Sometime try taking a vidalia onion, peeling it, scoring the top of the onion, adding some sort of oil or butter (just a little), wrapping it in foil, and throwing it on the fire. It caramelizes beautifully, and I love them.

  5. I want to know how your husband feels about eating meatless. My husband doesn't need a lot of meat but he does want some kind of protein like beans, eggs or tofu if he's not getting meat. He's happy even if I add some bacon bits to a veggie soup. How can I wean him off meat for every meal???

  6. lazy organizer: I'm thinking I need to have my husband post on my blog so everyone can have it from his point of view. I will have to see if he is willing to do that! Mostly I found that the less and less he ate it the less he craved it. He started telling me when he had a hamburger that it made him feel sick. I would just smile and say oh I'm sorry about that! ;)

    Also I really wish China Study had been written when we were starting cause I would have had him just read it. It would have really helped.

  10. We make these when camping too, and lots of times will add some type of beans to the mixture. I also love doing grilled pita pizzas over the campfire. It's another fun way to have healthy camping food.

  12. I've used parchment paper to cover things in the oven and works fine. Speaking of camping we healthified a cobbler recipe for our dutch oven instead of cake mix our mix of whole wheat flour and baking powder, instead of canned fruit frozen fruit and of course coconut oil instead of butter. We used sparking water instead of sprite it was yummy!

  13. Kimberley: I have tried a couple of "healthified" dutch oven cobblers. They are good just not quite Simple, Healhty, Tasty, good yet! ;) Way to go with the Healthifing!!!! What did you use to sweeten your "cake mix?" Thanks so much for sharing!

  14. That looks good ! I haven't had a tin foil dinner for a long time but my hubs often does fresh fish & veggies in foil packets with lemon slices and fresh herbs on the BBQ .

  15. We used pure cane sugar(my husband likes it better) I'm sure it would be fine with sucanuat. Thanks for the reply. If I would have thought of it I would have used your white cake mix recipe.

  16. mmmmm....I have totally had tinfoil dinners on the mind. We wrap ours like Kimberly in paper first, we've used brown paper bag, and butcher paper, even newspaper. NO BURNY spots, its amazing.
    I would love to have Kimberly's healthified dutch oven too!

  17. Woops, and then after the paper we wrap with tin foil, sometimes I think two layers. Like I say, uniform cooking and no burnies. :)
