Tam's Almost Makes Itself Apple Butter
20 medium to small or 10 large Apples peeled sliced and cored
3 cups apple cider
1 teaspoon lemon zest
juice of half a lemon
1 teaspoon cinnamon
1/4 teaspoon allspice
1/8 teaspoon cloves
2 Tablespoons Coconut Oil
1 drop butter flavor (optional)
1/2 cup Sucanat

Put all ingredients in crock pot on high for 6 to 8 hours. You can stir as much or as little as you want I like to do it about every time I go in the Kitchen just cause I love to lift the lid and smell it;) I also start mashing it up with a potato masher as the apples start to get soft. After it is well cooked and thicker I turn off the crock pot and let it sit for a bit then I blend it all in the blender till smooth. At this point you can put it in a container in the fridge and use like jam or just eat plain (my kids think it's great by the spoonful) or put them in jars to bottle. I tripled the recipe to bottle it and it made about 10 pints.

When you say put the apple butter in jars to "bottle", do you mean the whole cooking in the canning pan to seal the top thing? If so, how long do you cook the bottles for? Sorry if these are stupid question, but you gotta start somewhere right? Thanks... I'd really to make this. Our new house has 3 apple trees!

YES you do have to start somewhere and it is not a stupid question! And I wish I had 3 apple trees. I did plant one in my little tiny yard and it gets bigger every year but this is only it's third year so we don't have apples yet!

Yes to "bottle" is the whole cooking in the canning pan to seal the top thing. And honestly I don't remember how long they had to boil for. I think I have the instructions here on my computer though. I will try to find them. Wish me luck! ;)

Hey Jenn I found it, wow that was easy maybe I'm more organized then I think ;)

To bottle you want to cover the jars with at least 1 inch of water. I assume you know that the jars need to be serilized (the dishwasher can do this) and the lids boiled and the rings on I think any box of lids has those instructions. Let them come to a boil and boil for 10 minutes for pints and 15 minutes for quarts. If you are above 6,000 feet 15 minutes for Pints 20 minutes for quarts.

I had a question about the consistency. I'm in the middle of cooking the apple mixture in the crockpot and it seems a bit runny. I'm wondering if I didn't quite get enough apples in it. I know it will thicken a little when I blend it, but it doesn't seem like it will be that much thicker. (I've been mashing them with a potato masher.) Does it thicken as it cools?

Melissa if you are worried about it being to thin. You could take the lid off of the crock pot for the last hour or so. It seems it does get thicker once it is blended and yes it sets up usually to pudding like consistancy in the fridge maybe a little thinner but not much! Hope that helps let me know how it turns out! We love it around here!
