Banana Creme Pie

Banana Creme Pie
Crust one of 2 options:

Option 1:
Nut Crust
1 ½ cups fine almond flour (can grind in blender or seed grinder)
1 cup dates soaked/drained
2 Tablespoons lemon juice
Mix ingredients all together in food processor and press into pie dish.

Option 2:
Graham Cracker Crust
1 ½ - 2 cups 100% whole wheat honey grahams crushed in food processor
2 Tablespoons Sucanat or Organic Sugar
4 Tablespoons melted coconut oil

Filling:
9 bananas
1 1/4 cup coconut oil
1 cup cashews, soaked and drained
1 Tablespoon pure maple syrup

Mix crust ingredients together press into pie dish.
Blend Filling ingredients in the blender until smooth. It will look like pancake batter. You can slice a banana and place on bottom of crust if you want. Pour filling into the crust. This makes a deep pie so use a deep dish pie plate if you have one or 2 smaller pies. Top with "My Favorite Whipped Creme" in This and That. Let sit in the refrigerator for at least 3 hours to set will be better if overnight.

I'm planning to make this recipe tomorrow. But I want to make sure I'm reading it right--1 1/4 cup coconut OIL, not coconut MILK? Just thought I'd check. Hope to hear from you soon! Thanks so much.

Tina: Yep that is Coconut OIL. Also depending on how sweet your Bananas are you might want more Maple Syrup. Just test it before you pour it into the crust. And sweeten to taste. Also it does take a while to set up in the fridge just so you know.
