Can't Be Beet Smoothie ;-)



Have you ever taken the time to find out how good raw beets are for you? They help prevent all sorts or cancer especially colon, they help cleanse the blood, help prevent anemia, they are full of iron, folic acid, calcium, and have lots of fiber. Plus lots of other great stuff, look it up you will see what I mean. Also have you ever heard of Young Coconuts? They are sometimes called Thia Coconuts or Baby Coconuts or any mixture of those names. I have decided I really, really like them. The meat is great for lots of things including puddings that I am learning to make. But today I want to tell you about the liquid inside of them. You can look this up too! It looks like water but oh from what I understand it is better than any sports drink out there in terms of electrolytes and health benefits. And that it is the next best thing to Mother's milk for a baby because it has a very similar DNA and antibodies that mother's milk has. (Of course nursing is BEST) Anyway between the beet and the coconut water I really like how I feel when I drink this. Beets do have a strong flavor and I didn't always like the way it tasted. But this morning I think I figured it out. The Beet flavor wasn't too strong my kids all loved it and drank it up and I really do notice a difference in how I feel every time I drink it. This recipe is definitely going in our favorites! Please note though that this is SUPER healthy so don't be expecting a milk shake! But it really is quite good in a really nice healthy tasty way. And really even if it tasted kind of bad I would still drink it since it is so very good for you! But we really thought it was quite TASTY, let me know what you think!


Can't Be Beet Smoothie
1 1/2 cups Young Coconut Water (right from the coconut*)
1 small to medium raw beet peeled
1 large carrot peeled or 5 baby ones
2 Tablespoons Agave Nectar
Juice of one Lime
10 Frozen Strawberries
1/2 cup frozen Blackberries

Put all ingredients into blender, blend until really smooth.
*To get the water out of the coconut "saw" off about an inch of the FLAT side. A serrated bread knife works good for this. Then using a pointed screwdriver and hammer, pound two holes near the middle one where the soft part is and one somewhere else (this is a air hole it will help it come out faster) you can now pour the liquid into the blender. One coconut usually has about 1 and 1/2 cups sometimes less though.

Em, I can't take all the credit I got the idea from green smoothie girl. But hers just tasted way to healthy for our liking but I did love how good I felt so we "played" with it! Hope you like it!

I am going to have to try this one.. I just dont know if my non blend tec will blend it....
What do you think?

fitncrafty: I think if you are sure you have at LEAST the cup and half of liquid it should do OK. It's not really a thick one. And you may want to chop up the beet and carrots so it's not too hard on your blender. Be sure to give it plenty of time to blend nice and smooth.

Tam, I wonder how this would turn out if you subbed rice milk for the coconut juice...just because I can't seem to get into breaking the coconuts open. I know the coconut is more nutritious, but it would definitely be easier???Maybe I'll try it just for fun, since getting the raw beet juice in a palatable form would be great. Love ya. Mom

So I finally made a trip to the Asian market and bought some coconuts yesterday. Yeah! I tried this smoothie out this morning. (I don't know if coconuts are usually this hard to saw open but boy I felt like a wimp!) I'm still not sure about the beet taste but if it gives me enough energy to clean my house I can let it slide...

Is sea salt and iodized sea salt the same thing? Kimberley

Kimberley: I'm believe that most sea salt does have some iodine but some may have more than others. Also there may be some brands that may add idodine to their sea salt. I personally use Redmond's Real salt that does contain some naturally occuring idodine. I have also heard some really good things about Celtic Sea Salt.

Do you eat the coconut after you "juice" it? My kids aren't fans of fresh coconut but maybe the baby coconuts are more tender? Is an Asian market the best place to get them? Thanks!

Yep I freeze it and use it for pudding and we even used it to make banana cream pie for Thanksgiving it was super good. I will post the recipe soon!
