Yellow Type Cake

Of course because of the Sucanat this cake is really more brown than yellow. But it is very Tasty and somewhat similar to a yellow cake! I tried it to use for Trifle but I'm sure I will use it for other things too! It was a super Simple cake that I think will be very versatile!

Yellow Type Cake
4 cups flour whole wheat flour (I used hard white wheat)
2 teaspoons baking soda
2 teaspoons baking powder
1 3/4 cups Sucanat
1/2 cup water
1 cup rice or almond milk
2 tablespoons apple cider vinegar
4 teaspoons vanilla extract
1/2 teaspoon almond extract
6 tablespoons coconut oil, melted

Preheat oven to 350. In a large bowl, mix together dry ingredients. In another bowl, mix all wet except oil and stir well. Mix the wet and dry together. Add oil, 1 tablespoon at a time and mix well. This recipe will seem a little thicker then regular cake batter that's okay! Just spread into a lightly oiled large cake pan. Bake for 25 minutes or until done.

So I made this for my little man's bday and it turned out grainy...kinda like a sandbox really LOL. The taste was good but the rough texture was ummmm strange. Is it the sucanat that does this or did I totally mess something up?!

Breezy: Hummm grainy huh? I can see it being heavier then regular cake because of the whole wheat flour. What kind of wheat did you use? Was it the hard WHITE wheat?

I have noticed sometimes that sucanat will have big grains and not disolve very well. You could blend it in you blender a little before adding it to a recipe so it is not so course. Or just make sure to mix it in well with the wet ingredients so it disolves better. Hope that helps. When I have made it we have not noticed that it is grainy crumbly kind of but not grainy.
