Veggie Goulash


Whether you're feeding a crowd or want lots o' left-overs... this yummy recipe is super easy and it makes a lot. You can also use only canned veggies for a complete 'food-storage' meal. But....fresh is best...if ya got it.


Veggie Goulash
1 medium onion, chopped
2 large carrots, diced
1 bag frozen corn
1 yellow bell pepper, chopped
1 small head of broccoli, chopped
1 can garbanzo beans
1 can olives sliced
1 can pineapple tidbits
{whatever other veggies you like}
2 cans tomato sauce
1/4 cup ketchup
3 Tbsp. Agave Nectar
4 cups cooked brown rice
3 cups cooked whole wheat/spelt pasta.
salt and pepper, to taste
1 cup raw cashews (optional)

In a very large frying pan
put 1-2 Tbsp. of coconut or olive oil.
Add onions and cook until tender.
Add all the other vegetables and cover
cooking until desired consistency.
Add pineapple and
all the rest of the ingredients.

Mix well.
Cook until completely warmed.

Enjoy it all week long!

I want to try this-sounds good! Also I was reading past posts and someone mentioned an organic ramen soup recipe. can you tell me where to find this recipe?

KCKal: Ummm I don't have a organic ramen soup recipe. I know I talked about using some organic ramen noodles in the Crunchy Cabbage Salad recipe. Is that what you mean?

Do you know where to buy good ketchup in larger quantities than at Walmart? The only thing they had was a small organic bottle of Heinz or something which was good, but pricey and doesn't last long.

Jen: I get ketchup through Azure Standard. You can also get bigger bottles of it at health food stores but it usually costs less through Azure.

For the gal who was asking about Ketchup.....My Costco here in Northern California now sells the double pkg of large ketchups that is the Heinz Organic. You may want to try to call or check yours out. I hope this helps even though you asked your question several months ago. :)

Also, this recipe looks really yummy and full of vegetables. I can't wait to give it a try.

This is soooo tasty! Made it tonight....I could not find Agave Nectar anywhere, so I used sugar free maple syrup instead and I cooked all in a crock pot versus the stove. EXCELLENT!
