Fettuccine Alfredo



This is really, really, good be sure to give it a try!

Fettuccine Alfredo
1 Tablespoon olive oil
8 +/- fresh mushrooms, sliced or chopped
3-5 cloves fresh garlic, minced
1 can coconut milk
1/4 teaspoon nutmeg (don’t leave out)
½ -1 teaspoon black pepper
1/4 cup nutritional yeast
juice of half a lemon
2 Heaping Tablespoons whole wheat flour mixed with ½ cup rice milk

Saute the mushrooms and the garlic in a pan over med-low heat, for about 5 minutes or until the way you want them. Separately, bring the coconut milk to boil over a fairly low heat. As soon as it starts boiling, add the nutritional yeast, nutmeg, pepper, lemon and remove from heat. Mix it all together. Add the mushroom mixture to the sauce and simmer on low heat. While stirring slowly add the flour and milk mixture. Make sure to stir constantly or it will burn. Just stir until it come to a consistency that looks like alfredo sauce and serve immediately over noodles of choice. We use whole wheat spaghetti or fettuccine noodles. Would also be good with Spelt noodles.

Do you use a 14 oz. can of coconut milk? How many servings does this alfredo make? Thanks!

carla: Yes it's just the regular size can. It makes probably enough for about 4 servings. I have been known to double it only I don't double the garlic I just use 5 cloves.

Can I leave out the mushrooms as my family won't touch anything with mushrooms in it.

Carla: Yep leaving out the mushrooms would be fine. I would probably double it though.

I also haven't been able to find coconut milk. Maybe I need to concentrate on my shopping and not my 5 kids? Hmmmm. Good Earth again?

Shelly: I have actaully seen canned coconut milk at Wal-Mart! It's usually in the ethnic foods section near or on the bottom shelf.

I was a bit nervous going into this because I thought my husband would think it tasted like coconut but it came out really good. The flavors blended together great! I'm gonna steal it and recommend it on my cooking blog!

Do you use the nutritional yeast flakes, or the powder?

Carolyn: I use the flakes. But I'm sure either would work.

My girls LOVE regular Fettucini Alfredo, but with Lily's asthma I don't make it very often. Up to this point, every recipe I've tried has been pretty disappointing. I'm excited to try this without the mushrooms (most of my family doesn't care for them either...maybe I'll have to do some on the side for Lily and Leah).
