Cheez Cake

It's mulberry season in my hometown....they are kind of a cross between and raspberry and a black berry, sometimes more sweet other times more tart but always good. Mulberry trees can get huge giving you more berries and mess than you ever imagined. 

Alright I went snooping through my Sister Emily's blog archives and found some of her recipes she posted Pre-Simple. Healthy. Tasty.  I know she won't mind if I share!  Now if she could just let me know where she hid the Fruit Pizza and Tammie's Summer Slushy post I'd be most grateful!  Have a wonderful day!!!



Mulberry Cheez Cake
Crust:
1 ½ cup macadamia nuts (I used Brazil nuts, they're cheaper and taste close)
1 cup dates
½ t cinnamon

Filling:
3 cups raw cashews
1 Tablespoon Lemon Zest
4-5 lemons juiced
4 Tablespoons coconut oil
½ cup Agave Nectar
Handful or two of fresh picked mulberries or other favorite berries

Process crust ingredients in food processor until it hold together.  Then press in 9x9 pan.  Process filling ingredients in blender blend until smooth.  Spread filling on top of crust.  Put in fridge until firm.
