Quinoa Salad, Fiesta Style

We all enjoy this salad warm with dinner or cold leftovers for lunch!  Ryan even likes taking it with him to work.  Great versatile salad that can easily be doubled or just "stretched" by adding more Quinoa!  Makes a great side or main dish, also excellent for picnics and potlucks and of course great with these Quesadillas!  ENJOY!






Fiesta Style Quinoa Salad
Salad Ingredients:
3-4 cups cooked Quinoa (warm or cold)
1 avocado, diced
3 green onions, sliced
1 can olives, sliced
1 can corn, drained
1 can black beans rinsed and drained (opt.)
1 jalapeno pepper, finely chopped (opt.)
1 small bunch cilantro, chopped
2-3 Large tomatoes, diced

Dressing Ingredients:
1/4 cup olive oil
zest of 1 lime
1/4-1/2 cup fresh lime juice (or to taste)
2 Tablespoons agave
1 teaspoon Real Salt
Favorite Mexican seasonings (optional) I like a little cumin and chili powder

In large bowl stir together the salad ingredients.  In a 2 cup measuring cup whisk together dressing ingredients and pour onto salad.  Stir well and enjoy.   This salad is really good made with warm Quinoa that was just cooked or cold.
