Carrot Cake Smoothie

Another raw (or mostly raw depending on the sweetener you choose to use) favorite!  We made with with fresh raw carrot juice it doesn't get much healthier than that.  We were almost surprised at how yummy it tasted!




Carrot Cake Smoothie
3 cups fresh carrot juice
2-4 frozen ripe bananas (depending on consistency you want)
2-4 Tablespoon pure maple syrup or agave
1/2 teaspoon vanilla
1/4 teaspoon almond extract
1 teaspoon cinnamon
1 teaspoon nutmeg
a pinch of cloves and ginger
1/8 teaspoon allspice
small handful of walnuts (optional)

Place all ingredients except walnuts into blender.  Blend until smooth.  Can use other sweeteners or none if desired (depending on sweetness of carrots and bananas) will have to adjust amount of sweetener depending on one used for example 1/2-1 teaspoon of Stevia would add about the same amount of sweetness.  May use less or more spices the measurements are to my taste adjust to your taste.  May also add a pinch of salt if desired.  If using walnuts add after blended and pulse quickly, leave in fairly big chunks (you don't want a grainy smoothie).

If you don't have a juicer, how do you get fresh carrot juice?? =(

Allison: If you have a high speed blender you can blend it with a little water and strain the pulp. Or I know a lot of health food stores sell fresh juice made daily. Also looking at thrift stores for a juicer can be a great way to get one cheap!

I didn't have a juicer and just did carrots with water and didn't strain so it was a little lumpy but I was fine with that. It was really yummy. What a great idea for the summer Tammy it was so light and refreshing unlike its counterpart would be, real carrot cake. I would start with 1/4-1/2 tsp of nutmeg because that does make it quite spicey but with enough banana and the vanilla that really helps tame the nutmeg. It was our family night treat last night. Delish! Thanks.
