Peach Salsa























This is great if you want a sweet spin on your usual salsa AND if you have lots of yummy peaches and tomatoes to use up!

Peach Salsa
2 cups chopped fresh tomatoes
2 cups chopped, peeled fresh peaches
1/4 cup chopped sweet onion
3 Tablespoon lime juice
2 to 3 Tablespoon finely chopped, seeded fresh jalapeno pepper
1 clove garlic, minced
1 Tablespoon (or more if you like it) snipped fresh cilantro
1/2 tsp. Sucanat

In a medium mixing bowl stir together peaches, onion, lime juice, peppers, garlic, cilantro, and Sucanat. Cover and chill for 1 to 2 hours but if you are like me you will have to have a little first! ;) I have thought it might be good with some Mango too. Or I bet fresh pineapple in place of the peaches could be very Tasty!

Oh and if you add a little mango... ummm... nothing better then mango peach salsa!!

mmmmmm...good. Pineapple is a wonderful addition to salsa as well!!

I would love to sit around the fireplace with you on a crisp Fall evening eating chips and peach salsa and chatting it up! Let's do it sometime! K?!
