Veggie-bean Burgers

Kidney beans and chopped fresh veggies join forces to make this scrumptious burger. While cooking...open your windows and let the aroma fill your neighborhood. No one will ever guess you're grillin' up health food.

Veggie-bean Burgers
1 (15oz) can kidney beans, drained, rinsed
1/2 cup uncooked rolled oats
1/2 cup chopped fresh mushrooms
1/4 cup chopped onion
1 small carrot, shredded
1/2 medium red bell pepper, chopped
1 garlic clove, minced
3 Tbsp organic ketchup
3/4 tsp sea salt
1/2 cup cooked brown rice (optional)

In a food processor bowl with metal blade, combine first 9 ingredients; process with on/off pulses until coarsely chopped. Do NOT puree.

*This can also be done by blending kidney beans in blender on low then putting mashed beans into bowl adding finely chopped veggies, ketchup and salt.
Stir in cooked brown rice if desired.
Shape mixture into 4 patties, 1/2 inch thick.
Cook in frying pan over medium high heat until both sides are browned, 10-12 minutes...or until patties are thoroughly heated.
Place patties on whole wheat buns with lettuce, tomato slices and whatever else you like on your burger.

Perfect!

Note: I have made these burgers for years, and just last night I tried them with brown rice. They are delicious either way...but I will make them with brown rice from now on.
Enjoy!

So Em, would these work on a BBQ grill. Or are they kind of crumbly? I think I made these a long time ago and I can't remember they were good though! Thanks for posting them!

The ketchup helps the mixture maintain it's shape...yet, it's not really stiff. If your BBQ has narrow slits...go for it. If not, beware! ;)

They ARE tasty.

Looks good, can't wait! Add to my shopping list for next weeks veggie dinner! Bryce'll love it!

Emily what kind of buns do you use?

Last night we ate the Oroweat hamburger buns...they don't have any high fructose corn syrup...but they do have lots of ingredients...so probably not the very best choice.

We usually use Ezekiel Sprouted Grain Buns. They tend to have the same texture as a hockey puck, unless heated in the oven just before eating. Then they are just right.

Do you ever make your own Ketchup? I have a recipe and it is so EASY- I don't think we'll be buying ketchup again.
1 (4oz) can tomato paste
1 can water
1/3 C honey
1 Tb Molasses
1 tsp Apple Cider Vinegar
1 tsp Onion powder
1 tsp Salt

I usually double it. There's nothing wrong with using tomato paste? Right?

Hey Thanks Courtney! I have made Ketchup before but it was complicated and didn't taste good. This one looks much more doable. I will have to try it! And yeah tomato paste usually is just fine. It's the sauce you have to be careful of especially name brands like Hunts. I swear their "natural flavors" is MSG because I have side effects every time I have it so much so that Ryan is sure to keep that out of the house! ;)

Emily, I'm not crazy about kidney beans. Have you ever used other kinds of beans in this recipe? I like white beans and black beans, but for some reason do not love red beans. Thanks!!

Amy: Emily could probably answer this better since she has made more bean burgers then me. But I have made black bean burgers before and I bet pretty much any bean would work!

Tammie -- Sorry for calling you Emily! I had just read the discussion re homemade ketchup and had a brain freeze! I love your blog, and will be using some of your recipes in our menu planning for the week!

Amy: No you were totally right using Emily. She is my sister and she posted this recipe! She really is the one to ask! ;)

These were fabulous! My husband said he loved them better than a ground beef burger! Thanks Em!

Guess it's been a while since I stopped by but I finally got around to trying the veggie burgers - they turned out alright, kind of mushy - any suggestions?

Tammie said...

T Rex Mom: I would be sure your beans are drained really well and you could add more brown rice or oats in needed. And maybe make them flatter and make sure they are fully cooked.

I should never doubt you, because every recipe our family tries, we like or love it! Thank you again for another great one.

My family HATES mushrooms, alot of your recipes have mushrooms. What can I do to fill the void?

Tammie said...

Jeremy and Ruth: A lot of my family members are too keen on mushrooms either. I find chopping them up in some things helps. Letting them pick them out, but Ryan and I and some of our kids really like them too. If no one likes them then for sure I wouldn't bother putting them in. Ummmmm you could just use extra of the other ingredients in the dish. Like for instance with this recipe I would probably just add some extra carrot and oats or something. Mushrooms really don't have much flavor so they aren't essential to most dishes.
