Taco Soup


I'm still working on those menu plans trying to get them ready to introduce before the New Year;  And I am finding there are still lots of recipes to post!  So much good food, so little time! ;)  This is a super Simple throw together meal when you are in a hurry!  Don't be afraid to adjust the seasonings and ingredients to you and your families tastes!  ENJOY!


Taco Soup
4 or 5 cans of your favorite beans, drained
(I use pinto, black, kidney, and Garbanzo)
2 cans diced tomatoes
corn 2 cans or 2-3 cups frozen
1 large onion chopped
2 Tablespoons Olive oil
1 green bell pepper chopped
1-2 jalapenos chopped (optional)
1 can diced green chillies
1-2 Tablespoons chili powder
1 Tablespoon Mexican seasoning
1 teaspoon cumin
1/2 teaspoon curry
1 dash cayenne (optional)
sea salt to taste

Saute onion and peppers in olive oil for a few minutes. Add everything else, simmer until flavors are well blended. Enjoy with tortilla chips and Cheezy Sauce.

This was great, quite spicy with 2 halepenos,which is tempered if you add the cheezy sauce. I liked the curry in it. I keep being surprised realizing you don't need meat to make a great chili type soup, w/ great spices! Love the sweet of the corn w/ the quite hot. I put my onion in at the end, however, which could have added to the heat, also I've heard to eat raw onions when trying to ward off illness.

This is the BEST taco soup I have ever made. My family Loved it and no one even commented that there was no meat in it. I'm adjusting my family's diet one dinner at a time. This is so fun.

What is Mexican seasoning? I've never seen this in a store. Is it the same thing as Taco seasoning?

Heather: It is a lot like taco seasoning but most taco seasonings have not so good ingredients. I probably got my Mexican seasoning at the health food store sometimes I have seen it called southwest seasoning too. I usually just make my own, it's mostly chili powder, cumin, garlic and salt.
