Tomatillo Dressing with Lime and Cilantro


Tomatillo Dressing with Lime and Cilantro

4 tomatillos, husks removed and quartered
1 large clove of garlic
The zest and juice of 1 lime
1 Large bunch of cilantro
1/2-1 jalapeno pepper, with seeds removed unless you like it nice and spicy
1 small handful of raw cashews

Place all ingredients in blender and blend until smooth and creamy!

Just wondering if you have ever made your ranch dressing with something other than vegenaise. I have a son who's allergic to soy and all of the vegenaise I've seen has soy. P.S. My family LOVED your pizza casserole that I made last night!! Thank you!

Brandi: I haven't tried anything different but I have wondered If a handful of cashew or macadamia nuts would work in place of the Vegenaise. With this Tomatillo dressing I'm sure it would work because there is plenty of liquid from the lime juice and tomatillos to have them blend nice and smooth.

Mayme: Yeah the Ranch Dressing one seems to be funny for some reason there are probably others too I switched things over not too long ago still working on dropped links.

Made this for a party I was attending so I could have my own dressing for the Cafe Rio-style salads (also brought yummy lime rice) & it was superb!! Even Lauren liked it! Thanks for coming up with this delicious recipe!!
