Applesauce Cake



Applesauce Cake   
1 Cup melted coconut oil
1 Quart unsweetened applesauce
2 ½ cups Sucanat
½ Tablespoon Molasses
Egg Replacer for 3 eggs
4 teaspoons baking soda

Stir soda into applesauce and when foamy add in oil, Sucanat, Egg Replace, beat.

Add :
2 teaspoons cinnamon
1 teaspoon cloves
1 teaspoon nutmeg
1-2 cups raisins and 2 cups nuts
4 ½ cups hard white wheat flour

Mix batter well then fold in nuts and raisins.  Spread Batter onto lightly oiled cookie sheet.  Bake at 350 for 1 hour.  Top with turbinado before baking or Powdered turbinado after baked and cooled.  Or is great with a simple frosting of powdered turbinado sugar mixed with a little coconut oil and rice milk until frosting consistency and a little vanilla.  You can also make a thinner glaze and put it over the cake made in a bundt pan.  Really yummy and pretty made this way too!

That looks really yummy! I'm such a newbie, can I use eggs instead of egg replacer? I assumed so, but I just wasn't certain.

Kathie: Eggs will certainly work instead of eggs replacer. When I do use some egg I always make sure it is home grown/free range healthier type eggs. ;)

i just made this and it was a big hit! and then later i suddenly realized that i forgot the molasses! now i want to make it again to see what it tastes like with the molasses, but if you wanted to know, its really good without it too! also, did you really mean to say cookie sheet? because i put it in a cake pan and it didn't seem to need quite an hour. i also want to try it in a bundt pan, did you do it a different time and temperature when you baked it in the bundt pan?
