Strawberries and Cream Pop

It seems like every time I go spend a few days at my Mom's I get a new yummy recipe.  This one was invented by my Mom and Sister I take no credit whatsoever, they only asked me how much sweetener I thought would be good.  I am also adding an optional ingredient to help smooth the texture.  These were a hit for all the kids running around outside in the hot weather.  I think this would also be good with almost any berry and/or other fruits.  Think Blueberry, Cherry or Raspberry, or even Peach, Apricot,  Pineapple or Mango.  So many fun combos and possibilities.  Now you will be the funnest Mom on the block and not sacrifice the nutrition.  With chemical colorings and processed sugars.  Have fun!





Strawberries and Cream Pop 
3 cans coconut milk
8 ounces frozen Strawberries
dash of Real Salt
4 Tablespoons Agave (more or less depending on sweetness of fruit used also 30-40 drops of liquid Stevia instead of agave would work good,  I have the Vanilla kind so that would be tasty)
1 teaspoon guar gum, optional

Blend all ingredients in blender until smooth.  (If you have a high speed blender like I do be sure not to over blend as this can cause the coconut milk to separate and become grainy.)  Pour into Popsicle molds or paper cups.  Freeze in freezer until solid.

We are trying these today. I made something similar from pinterest, but it layered the ingredients and didn't have the guar gum in it. My kids liked the coconut layer better. I am sure they will love these though!
