Cream of Tomato Soup



Super Easy Cream of Tomato Soup
4 Tablespoons finely diced onion
1 Tablespoon Shoyu (natural soy sauce)
1 15oz can tomato sauce
2 cups almond (or rice) milk
1 Tablespoon arrowroot powder or organic cornstarch

Saute onion in soy sauce until onion is tender.  Add 1.5 cups of almond milk and tomato sauce to onions, bring to a boil. Mix cornstarch with remaining 1/2 cup of almond milk.  Add cornstarch/almond milk mixture to soup, stirring constantly until thickened.  Season to taste with your favorite seasonings.  We use onion and garlic powder.

Whole Wheat Tortilla Crisps
1 package whole wheat flour tortillas
olive oil
garlic powder
onion powder
parsley
sea salt

Using pizza cutter, slice tortillas into triangle shapes lightly brush on olive oil sprinkle spices on top bake on high broil until lightly browned (this will not take long)

Dip tortilla crisps into soup and ENJOY!!

My son wanted Alphabet soup, because it is so fun. I used this recipe as a base and added veggies and ABC noodles. I did substitute veggie broth for the rice milk. It was fast and fun, and my husband loved it when we made it more hearty.
