Throw Together What I've Got Soup


This recipe is a little different every time but I will try to give you the basics so it's easy to throw together your own soup any time!

Throw Together What I've Got Soup
Soup Base:
2 quarts bottled tomatoes (if you don't want a tomato base you can use water you will just need to add more seasonings)
1 Heaping Tablespoon Veggie Broth Powder
1 teaspoon Sucanat (optional)
1-2 teaspoons Real salt, or to taste
1 Tablespoon Olive oil
2 cloves of garlic
1 onion chopped
1-2 teaspoons favorite seasonings of choice (I like Italian seasoning and basil)

Veggies:  This is where the "What I've Got" comes in.  Seriously go through your fridge and use what needs using.  Here are some examples that I typically use and that we really like.
1/2 head of green cabbage or broccoli, chopped
1 zucchini or summer squash, chopped
1-2 stalks of celery, chopped
2 Large carrots, chopped
2 jalapenos
1 bunch of fresh parsley, cilantro, or other fresh herb that need to be used
1 pint of bottled green beans or canned diced potatoes (I use this if I think it needs more veggies and I don't have anymore fresh ones


Fillers:  Choose one!  This is to make the soup go further and be more filling.  I typically use cooked barley or brown rice.  Millet is also really good
1/2-1 cup cooked brown rice
1/2-1 cup cooked Barley
1-2 cups cooked Millet
1-2 cups cooked Quinoa
2 cups whole grain pasta, Shells or Elbows work best.

Putting it together:
First I always take the oil, onions, garlic and start to saute them in the LARGE pot!  Then I add the other Veggies and lightly saute them.  Then I add the rest of the ingredients and let in simmer for 15-20 minutes.  It's so warm, tasty, and nourishing on a cold winters night and it helps use up those veggies that are needing to be used.  Feel free to be creative and use what you've got!

I tried to comment before, and it didn't work. I'll try again. This reminds me of your Grandma Robison. Take whatever is available, or any leftovers and make a delicious soup or stew. And they always were delicious. You are so creative and resourceful. I am so proud, and I know Grandma is too. Love Mom
