Chickpea Salad Sandwich

These Sandwiches remind me a lot of Chicken Salad Sandwiches and/or somewhat like tuna only these are way better, cheaper, and just as easy if not easier to make!  Great for Summer Picnics or a quick, cool, didn't have to heat up the stove dinner! ;)  Enjoy!







Chickpea Salad Sandwich
1 can garbanzo beans drained and kind of chopped but still coarse
1/4 cup raw cashews
1/2 avocado cut up in small chunks
2 or 3 green onions sliced
1 pickle chopped
1/2 green bell pepper chopped
1/2 cup Vegenaise (can add a little more or use a little less depending on how creamy you want it)
1/2 teaspoon pickle juice (optional)
1/2 Tablespoon stone ground mustard
1 Tablespoon Sunflower Seed Sour Cream (optional I use it if I already have some made)
1 teaspoon dried parsley
dash of dill
dash pepper (white or black)
sea salt to taste (I just used a few dashes)

Take all the ingredients and mix together in a bowl. Put on whole wheat bread with sliced tomato and romaine lettuce leaves.

Love these! When your kids were staying at moms...they made some of this and instead of bread...they wrapped it in lettuce! YUMMY!!

I'm excited to try this delicious looking sandwich. And look at what your kids did on their own, made this AND wrapped it in lettuce. Amazing.

These sound delicious! I've been wanting to make chickpea salad sandwiches this summer anyway, and now I have a great reason to stock up on chickpeas (I'm currently out--GASP!).

Oh my gosh, what a great idea! I just soaked and cooked some chickpeas and was trying to decide what to do with them. I don't have all these ingredients but I bet it would still work out with most of them. Mmm...

Emily and Emily: Thanks for the Birthday wishes and wow sounds like my example is inspiring my kiddo's they are even making my healthy stuff more healthy! ;) I love it!!!

Queen Mommy and Trish: We love Chick Peas around here. A great food storage item. I'm wanting also to learn to make really good healthy Falafel and of course Hummus is yummy! Also we make these sandwiches leaving out or subbing other ingredients all the time. The other day we were at a friends and made it with chick peas and add cooked cauliflower to make it go further we used green onion left out avocado and the cashews threw in the seasonings but used vinegar instead of mustard for the tang also left out the bell pepper cause she didn't have any. They were super, everyone liked them!

I made these tonight and had to comment again. They are really good, even without the avocado and green onion (I was out). They almost remind me of egg salad, but maybe I'm crazy because I haven't eaten real egg salad in 10+ years.

We love chickpeas around here too, and I make hummus all the time. As for falafel, I've made sweet potato falafel a couple of times, and they are excellent. I believe this is the recipe I used: http://blog.fatfreevegan.com/2009/01/sweet-potato-falafel-with-yogurt-tahini.html I served mine with tabouleh salad instead of sauce. And, I think I used cilantro instead of parsley in the falafel.
