Cream of Something Soup

(I call this cream of something because I use it in place of things that call for cream of mushroom or chicken etc.  Please note that is NOT good as a soup on it's own.)

Cream of Something Soup
2 1/2 cups rice milk
3 rounded Tablespoons whole wheat flour
1/4 cup nutritional yeast
2 Tablespoons Nama Shoyu

In a sauce pan put 2 cups of the rice milk mix with the bullion bring to a boil at medium heat. In a cup or small bowl whisk together 1/2 cup rice milk with the flour. When the first mixture is boiling; slowly add the flour mixture while stirring. Turn off heat mix in rest of ingredients.

What is Nama Shoyu? Sorry I am new to this whole thing and will probably be asking a lot of questions.

Heidi: Nama Shoyu is basically a healthier type of soy sauce. It can be found at pretty much any health food store.

Would you say this is the equivalent of 2 cans cream soup. Wondering for replacement in recipes...

Mayme: At least 2 cans. Know too that it is thinner you can use less liquid if you need it to be thicker. Best guess is it makes about 2-3 cups worth.

I recently started making cream of cauliflower, or cream of celery soup, mmmm, and I do pretty much the same ingredients, but I use rice flour instead of wheat, and I love the way it thickens it! Thank you for all your delicious recipes!
