Peanut Butter Bars

My Sister gets credit for these she originally healthified them and made them for us.  We loved them.  I took her recipe and fit it to my family, using ingredients I have on hand and of course making a larger batch!  Thanks Em for another super tasty recipe!

Peanut Butter Bars
2 cups rolled oats
2 cups whole wheat flour
1 cup Sucanat
1 cup all natural peanut butter
1 teaspoon baking soda
1 cup melted coconut oil
Egg Replacer for 1-2 eggs
1/8 teaspoon sea salt

Combine everything in a large bowl.  Press into a bar pan (mine is 17"x 11" makes a pretty thick bar) bake at 350 degrees for 15 minutes or until done.  Frost when cooled.

1/2 cup natural peanut butter
1/4 heaping cup softened or melted coconut oil
1 teaspoon vanilla
3-6 Tablespoons rice milk
2-3 cups dehydrated cane juice crystals powdered in blender

Mix the first 3 ingredients together really well.  Add  enough milk and powdered can juice crystals to make the right consistency.  Spread onto cooled bars.  Refrigerate for best results.

Hooray!! These peanut butter bars ARE delicious. They've been the loot for many bribes around our 'hood! ;)

I totally failed making this recipe. The bars are just crumbs, not even crumbly. Not sure what I did wrong, used all the same ingredients and measurements.
But I am still enjoying your blog.

Sarah: Bummer these are super good. I do sometimes have things like that happen even with things I've been making for a long time that always turned out good before. It's those times I blame it on the weather or something. ;) My trouble shooting ideas would be either more coconut oil or egg replacer to help them hold together or maybe see what kind of whole wheat flour you were using I used hard white wheat. It's less heavy. They should stay together pretty well. Oh but one thing, I did refrigerate mine because coconut oil does become liquid at 76 degrees. So if they get warm at all they will get very crumbly and fall apart.

That was probably my problem, I tried spreading the frosting on and cutting them before they were totally cool, let alone cold from the fridge. I'll make sure I put them in the fridge first next time.

I have a very unhealthy peanut butter bar recipe that my husband just loves, but the frosting is chocolate. I think I'll try this one instead and add a little carob powder to the frosting. Every time I can replace a much-enjoyed recipe with one that is similar, but healthy, I feel so happy and excited to feed my family better food.
