Fresh Tasting Marinara Sauce

This year our garden (it's first year at our new home) is about ready to give us all these ingredients!  I'm so excited I think we are finally figuring out how to garden. (It only took us about 16 years of practice....so much of gardening is trial and error)  Still no lawn but we have a great garden I'll share pictures soon!

Marinara Sauce from the Garden

Last year when our garden was being very productive I made this and we loved it!  We put it over spiralized zucchini but you could put the zucchini in the sauce and use the sauce over whole grain noodles or as a dipping sauce for bread sticks etc. ENJOY!




Zucchini Spaghetti with Homemade Sauce
Garden Marinara 
1 quart bottled garden tomatoes (or fresh chopped)
1 small onion, chopped
1 large green bell pepper, chopped
6-8 large button mushrooms, thickly sliced
1 can tomato paste
2 1/2 teaspoons apple cider vinegar
1/2 teaspoon Real salt
1 teaspoon vegetable broth powder
1/2 teaspoon ground fennel seed
2 teaspoons oregano
2 teaspoons basil
1/2 teaspoon pepper
1 Tablespoon Sucanat
Zucchini
Hemp seed, for topping (opt.)

In large skillet saute veggies in a little olive oil if desired add seasonings stir till just warm then add tomatoes and rest of ingredients.  Simmer until veggies are done to your liking.

It would be fine to make extra and freeze it, right?

This is delicious! (I think I used one little packet of stevia instead of the sucanat.)
