This is a excellent super easy Sloppy Joe recipe that is made with Lentils so it is Vegetarian, Vegan, Healthy, or whatever you call it! ;)  Lentils are a great source of protein and iron, high in fiber but low in fat!  We love Lentils at our house!




Lentil Sloppy Joes

Crock Pot Sloppy Joes made with Lentils
4 cups water
2 cups Green/Brown Lentils
1 onion, chopped
2 cloves garlic, minced
1 green bell pepper and/or 2 jalapenos, chopped

Place the ingredients above all in a crock pot and cook on high for about 3 hours or until Lentils are done.

Then Add:
1-2 Tablespoons chili powder
2 teaspoons mustard powder
2 Tablespoons Molasses
4 Tablespoons Sucanat
3 teaspoons Real Salt
3 teaspoons Vegetable Broth Powder
1 can diced tomatoes
1 can (6oz.) tomato paste
2 Tablespoons apple cider vinegar

Cook for at least one more hour, may uncover crock pot while cooking the last hour to help thicken more.  Spoon onto whole grain buns or bread.  It's also good with some Cheezy Sauce.

  • 1 can (14.5oz.) diced tomatoes
  • 1 can (6oz.) tomato paste
  • 2 Tablespoons apple cider vinegar
Instructions
Place first five ingredients above all in a crock pot and cook on high for about 3 hours or until Lentils are done.

Then add the rest of the ingredients and cook for at least one more hour, may uncover crock pot while cooking the last hour to help thicken more. Spoon onto whole grain buns or bread. It's also good with some Cheezy Sauce.

Love this. I enjoy a good crock pot meal for days I know lead to 'processed' dinners if I don't plan well. Where do you get your veggie broth powder? I was getting it at Sunflower but their bulk sections been disappointing lately.

Kat: If you click on Vegetable Broth Powder on the recipe it will take you to a recipe for Veggie Broth Powder! I make my own it saves us lots of money and it's better then anything else I have tried. Also because I make it I know exactly what's in it!

Just made this for dinner tonight:) Yummy! My husband came home and said "man what smells so good" ? He was wanting to go down to the causeway to go fishing and grill hot dogs, but instead, we were able to bring this and have a picnic at the park! Yay! I didn't have to sacrifice a whole day of eating healthy because I already had this made! So easy too! He really liked it, but he did say, "this would really be good with some big chunks of beef in it" LOL. Thanks for another great recipe!!

We made this the other night for the first time! I doubled the batch and it fed my family of 5 huge eaters, plus there was so much leftover that we've used it as the 'meat' for our tacos for two full meals since then. It's absolutely Delicious!!
