Gut Healing Strawberry Banana Smoothie Bowl


Recently I posted My Favorite Smoothie Mix.....we have been making and enjoying smoothies for a long time now but after a while, even with lots of greens and super-foods some smoothies seemed lacking. They didn't keep me full long enough and often they seemed too sweet with lots of fruit and sometimes added honey or other sweeteners.

I was learning more about the importance of healthy fats so I started experimenting trying to find ways to add lots of healthy fat to my smoothies. Then I found that even natural sweeteners can be overdone and that I was loosing a taste for things that were too sweet.....fruit is plenty sweet and you don't even need a lot.

Then I figured to round things out it needed to have to good amount of protein. Not only did this make it a great pre or post workout smoothie but a perfect meal in and of itself keeping me full for hours.

Then while I was at it why not add some gut nourishing and healing ingredients since most of our guts need quite a bit of TLC.  This smoothie bowl is just the first of many of the fun smoothie recipes I have created that me and my family have been enjoying for quite some time now. I hope you enjoy this one I look forward to sharing even more!


Gut Healing Strawberry Banana Smoothie Bowl
makes 2 or 3 bowls depending on size

1 cup coconut milk (I like to add a bit of kefir here too for the probiotics)
2 heaping scoops of My Favorite Smoothie Mix
1 frozen banana
2 cups frozen strawberries
1 Tablespoon Coconut oil or MCT oil (a handful of walnuts or cashews here works too)
1/2 cup crushed ice (optional if you like them really cold and thick)

Toppings
Sliced fruit (strawberry and/or banana)
Granola or I used some of my crushed up candy bars in the pictures
sliced almonds, chia seeds (optional)

Blend all ingredients except toppings into blender.  If you want it thicker add more frozen stuff ;) if you want it thinner add more coconut milk or a little water. Pour into bowls add toppings in a fun pretty way!

Seasoned Pumpkin Seeds

These are a super simple super healthy snack that the entire family loves. Pumpkin seeds are a super food in my mind they are high in  zinc that can sometimes be hard to get enough of. They are also anti-parasitic, cleansing and great for prostate health for men. And that's just off the top of my head. Search their many health benefits and you will see what I mean.

Since they are such a healthy little seed I like to find ways that we will want to eat them. I like to add them to granola whenever I can but I found that Charly didn't really like eating granola with pumpkin seeds. For some reason she doesn't like their flavor in granola (although I do give it a try) but she loves pumpkin seeds when I flavor them this way.

She even asked if I would be sure to make them this past Halloween to go with dinner! Quick and easy to make and they are great to just munch on, to add to a salad or top soups or stir fry and I'm sure other things I haven't thought of! ;)


Seasoned Pumpkin Seeds
3 cups raw pumpkin seeds (without hulls)
a few splashes of coconut aminos or lime juice (for chili lime flavor) just enough to lightly coat the seeds and make them damp
1 teaspoon onion powder
1 teaspoon chili powder
1/2 teaspoon Real Salt
1/4 teaspoon garlic powder

Preheat oven to 350 degrees. Place pumpkin seed in bowl, add the coconut aminos or lime juice. Stir to coat the seeds. Add the seasonings stir well to coat again being sure all the seeds have a good amount of seasoning on them. Spread out on a single layer on a cookie sheet (may use parchment paper if desired) bake for about 20-30 minutes or until the seeds are dry, kind of puffed up and toasty. Be sure to stir about every 10 minutes while baking.



My Weekly Meal Plan


This week has been very full! In the midst of what has been known as "Bundle Week" I have also had plenty of harvest to put up, preserve and EAT! ;) I made more Salsa and Pickles this week, Pear Sauce, Pear Butter and Dried Pears. Barley Soup, more salsa, probably some spaghetti sauce and more stuff with pears is on the to do list this week! It's such a wonderful time of year I just love it!

I love the idea of making my own soap and have for years now! Honestly though I have never actually made my very own batch of soap. It just hasn't made it to the top of the to do list yet but one day I will be a soap maker because I know I will just love it and the recipes in this book will be my first resource. Almond Milk, Stretch Your Dollar Recipe



So I told you I would share my almond milk recipe that I have been putting in my latest favorite smoothie.
Now just so you know I don't consider this a nice rich creamy drink alone type milk...although some of my kids like drinking it straight from a glass.

This recipe is fairly dilluted compared to a lot of the others out there and because I wanted it to use mainly for smoothies or as milk in baking that it didn't need to be as thick either so I didn't bother with adding Irish moss or guar gum to give it a thicker, creamier texture. You could though if you wanted too.  Anyway just don't expect it to be a super tasty drink on it's own. That's a recipe for another time.

I like this recipe because IT'S CHEAP. I only use 1 cup of almonds and it makes 2 quarts of milk. It really helps that dollar stretch. Plus you are basically using raw sprouted almonds so it's full of enzymes and good nutrition. I also make sure and use the leftover almond pulp in pancakes or granola or something. Yep there will be recipes once they are perfected. ;)

Okay know that you don't need a high powered Blendtec Blender to make almond milk. The almonds are soaked and soft and there is plenty of water so a regular blender should work just fine.


I put a colander over a bowl and then place the nut milk bag in the colander it just makes it easier.


Then I usually just clip the bag closed and let it sit there and drain on it's own for a little while. After a bit or longer depending......you know how it is for Mom's ;) I then squeeze the rest of the milk out then finish making the milk. I put the pulp in the fridge to use later and rinse out the bag right......it cleans up really easy especially if you have got most of the liquid out of it.


Simple Cheap Almond Milk
1 cup almonds soaked in water overnight
8 cups water, divided
1/4 teaspoon real salt
20-30 drops liquid stevia, vanilla flavored

Drain water off the soaked almonds and rinse. Discard soak water. In blender blend the almonds and 4 cups of water until very well blended. Then strain through a nut bag or cotton cloth (see pictures above to see how I do it.) Pour strained milk into 2 quart pitcher, add 4 more cups of water the salt and stevia. Refrigerate and use within about a week. Stir well before each use. Save almond pulp in fridge to add to muffins, pancakes, granola etc.

I was looking at this book about Kale last night and since I still have lots of kale growing outside I'm excited to see all the fun ways to use it that even I haven't thought of! Hello Curried Carrots and Kale and Sneaky Chocolate Shake!

Of course this granola book caught my eye too! There are some great tips and ways of making granola so it turns out really good and not so chewy although sometimes I think a good jar workout never hurt anyone. ;) We make a lot of granola around here and I'm thrilled to have all these added recipes. I also like the idea of adding juice as part of the wet ingredients.......oh so many great ideas. As soon as my kitchen is cleaned up from all the fall harvest food preservation I'm going to try out some recipes!

And I almost feel silly saying this but I found myself really taken by this Natural Homestead book. I'm not sure why but something about living on a homestead really appeals to me. It's like a secret dream that I don't like to talk about much because I don't think I'm capable of that much work. Maybe it's all the Little House on the Prairie that we read to the kids but it just seems so romantic to me. I don't know I'm sure if I ever get the chance to try it I will wonder what the heck was I thinking but for now a girl can dream right! Don't tell but I'm nearly through this book! And I'm eying the other books in the Gardening and Homesteading group.

My Weekly Meal Plan

Last week we had a lovely time camping with family at the Nelson reunion. Meals were simple....I don't ever really plan lunches while camping because for some reason or other my kids just don't eat as much in the mountains. We took some snacks like fruit, bean dip with chips, and some things but not even all we took of those got eaten.

For breakfast I took some of my pancake mix, stuff for breakfast burritos (wow that's a post that needs some updating ;) and granola. For our dinners you can look at last weeks meal plan on Thursday, Friday and Saturday. I made the soup ahead of time and had froze it in containers. I love to do this because it makes it so simple to have warm homemade soup in the mountains. I have also done it with chili and other kinds of soups.

For other camping meal plan ideas you can see our camping meal plan from last year. We still have plenty of camping plans for our Summer and plan to use some of these ideas again.
We did have some rain but it is so needed around here I tried not to complain.....too much ;) I know my yard and garden are loving the rain. Now on to this weeks meal plan....

Monday: Stir Fry with Garlic Sauce - The last Garlic sauce we tried was okay but we want to keep trying to get a really good one. So it's back to the drawing board.

Tuesday:  Taco Salad in a Jar - Charly enjoyed the salads in a jar we had a few weeks back so much that she requested them for her birthday dinner! (pictured above and yep empty Adams peanut butter jars work great since they have a nice wide mouth and are wide all the way down....and yep I didn't bother to scrub all the labels off just to get a nicer picture ;)

Wednesday: Raw Southwestern Salad

Thursday: Quinoa Burgers

Friday: Grilled Vegetable Stack with Lemon Hummus

Meal Plans Made Easy

This past week I knew we would be traveling come the weekend so I prepared. I made a big batch of High Protein Granola and some Chewy No-Bake Granola Bars that we could take with us.

Ryan took the boys Friday up North with him to help clean up the Northern Branch. I took the girls and went South to my Aunt Renee's funeral. The funeral was perfectly wonderful and Aunt Renee will be greatly missed but I know she is not far and that she is no longer in pain. I am grateful for my knowledge of the plan of salvation.

The boys had a fun time and I was jealous that they got to go eat at Ginger's Garden Cafe (my most favorite healthy place to eat in Utah County). The girls and I were able to stay with my parents so of course Mom made sure we had good food to eat. Mom's are always so good that way!


We were also sure to pack whatever we had in the fridge like apples and oranges and a few leftovers. After all these years of practicing eating healthy while On The Go we find it's really quite easy to stick with eating healthy even while traveling.

This week I'm feeling a  little behind because of the busy weekend. We are also getting low on food in the fridge because it's been over 2 weeks since I have been grocery shopping. So I will try to meal plan with what I've got. I may need to get a little creative and I will probably need to make a shopping list and at pick up at least a few things.

My Weekly Meal Plan

Alright so my first week of trying this and I'm a day behind. Isn't that just how it goes? But that's okay I'll just post what we had last night for dinner ;) it's all good.

If you have read my Simply Scheduled ebook you will know that I mostly focus on dinner when it comes to meal planning. Breakfast and Lunch just seem to be okay if they are redundant and maybe even boring.  Smoothie, Oatmeal or Granola usually for Breakfast with a fun big brunch most Saturdays. And Lunch is either Salad, Sandwiches or Leftovers of some sort. I also mention in my ebook that we try to always have a big fresh salad of some sort with dinner. Usually it's just a big green salad with whatever I have thrown in.

Today I'm cooking up a big pot of Chickpeas (garbanzo beans) in the crock pot so it's going to be a chickpea kind of week. I will probably freeze a couple of pints but mostly we will eat them this week.

Sweet Potato Curry (My daughter whipped this up last night without a recipe it was really good....I'm such a proud Mother ;)....I wrote down what she did, it will become a perfected recipe sometime.)

Tuesday:
Flatbread Falafel Sandwich (I'm going make the flatbread from sourdough.....We have tried this a few times it's way good....I'll post a recipe soonish)

Wednesday:
Potato Soup (hopefully there will be leftover flatbread to have with this and I think I'll make some hummus too)

Thursday:
Some sort of Curry with Chickpeas (We are getting ever closer to having a handful of some really good curry recipes)

Friday: 
Quesadillas

Saturday: 
Leftovers

Sunday: 
Minestrone Soup (easy to throw into the crock-pot before church)
